I cut up a pumpkin several weeks ago with plans to make these pumpkin raviolis, or a pumpkin butter. What has stopped me from making the raviolis is not the scary fact of ‘I have to make my own pasta?!’, but that I need to refrigerate the dough for severeal hours. What the smart thing would be to do is to make it a day ahead of time or make it on the weekend. However, my brain is not working that well this week
If only I had the brains of these two..
So instead of using the pumpkin that I cut up, I made one of my favorite foods with some left over caned pumpkin from a demo.
My favorite recipe… cookies!!
Just a heads up these are caky and soft. If you are looking for some crunch, do not make these…. or burn them.
Whole wheat pumpkin chocolate cookies
3/4 can of pumpkin
1/2 cup of white sugar
1/2 cup of brown sugar
1 egg
1/2 stick of butter room temperate
1 T vanilla extract
1 1/2 cup whole wheat pastry flour
1 t baking powder
pinch salt
generous pinch of cinnamon, pumpkin pie spice and ground cloves
chocolate chips
Pre heat the oven to 350 degrees F. Mix the wet ingredients in a kitchen aid or a hand held blender. Mix the dry ingredients in a separate bowl. Then combine and fold in the chocolate chips. Drop by the spoonful onto a greased baking sheet for 15 – 17 minutes.

These can even be eaten as a not so unhealthy snack. There is 1 full cup of sugar in the recipe, but it made 16 cookies. Do the math (with the help of an online converter) it provides 14 grams of sugar/cookie. Take a look at some granola bars or yogurts and there is close or more than 14 grams of sugar.
Totally random, but remember several weeks ago I made a dish thinking I was using delicata squash, but I was using sweet dumpling squash instead. The oblong squash on top of the pumpkin is what a delicata squash looks like.
Yes I bought more pumpkins even though I have an entire cut up pumpkin not used in my refrigerator. I have a weird scary pumpkin disease. But hey, winter squash can sit on your counter forever! And no that is not mold on the side of the pumpkin, it just has some ugly skin.
