Pesto is one of the most tastiest sauces/spreads and can be used to yummify almost any dish. However you need a lot of basil and right now it is not in season.
A lot of places and recipes use kale instead and the end product is just as delicious!
What did I do with my kale pesto? Pizza!!!
Any type of pesto is super easy. All you need is a food processor and of course the ingredients!
The kale I used was Lactino Kale aka dinosaur kale. I think it is called dinosaur kale because of the texture of the leaves.
I put in a half a bunch in the food processor along with diced garlic cloves, 1/2 cup Parmesan cheese, handful of roasted walnuts roasted and 1/4 cup olive oil. Next time I am going to go heavy on the oil to make a thinner pesto spread.
On top of pizza it goes!
For fun I added some baked sweet potato chips that I made by slicing them really thin with a mandoline and baked for 30 minutes flavored with olive oil and lots of rosemary.
Pizza goes in the oven on a pre heated pizza stone at 500 degrees F for 1
Right before I cooked the pizza I added some thawed edamame on top which I meant to add to the pesto mixture.
