Yep and they are good!!
I heard all about them before. Many organizations bases on getting kids to eat healthy have made these. Of course the kids devoured them.
So beets are red. Really red. Kinds fits valentines day don’t you think? So I thought it would be fun to make them for the seniors at the nutrition sites where I work. The only problem I never made them!
So last minute I emailed Audrey from Bending Bridge farm and asked her to add lots of beets to my order last minute. She added about 10 small beets and it ended being just enough!
I looked through a bunch of recipes and decided to use this balance of ingredients
Mix the wet ingredients in a bowl. Then add the flour and cocoa powder and mix. Last step is to fold in the chocolate chops. Pour the batter into a greased cake pan and bake at 350 degrees F for thirty minutes.
The first batch I made I used one cup of beets instead of a half cup. They were definitely more “beety” which is fine if you like Beets. I however opted not to use a full cup because I wanted the brownies to be more chocolate tasting for a valentines treat.
So Wednesday I baked 4 batches of these brownies and divided them between my four sites. The final verdict??? The seniors loved them. Most said they could not even taste the beets and were surprised there was no butter in them!
I actually called them red velvet beet brownies. Look at the beautiful color of the batter!!!
