Wake up to apples

This is about the billionth time I made these Apple panckaes so it is about time I share them with you all.

They are super easy to make and super appley tasting! They also refrigerate well so it is a great pre made breakfast for the week.

The first thing you do is grate 2 apples. Leave on the skin! After they are mixed add about 1 T of lemon juice.

Then add two eggs to the mixture.

Then add some whole wheat pastry flour. I’d say about 1/2 cup. You don’t want the mixture to be too cakey so go light on the flour. Remember you can always add more, it’s harder to take away.

Then add about 1 tsp of baking soda and salt.

Now comes the best part! Add a generous amount of freshly grated ginger. It smells so delicious when you start to grate ginger mmmmmm!!!

Then add whatever spices you like. I like to mix it up with cinnamon, nutmeg, all spice and cloves.

Pour the mixture into a hot greased skillet on medium heat. The key here is to let the pancakes cook for about three minutes before you flip them. There is not too much fat in the cakes so you need to give them a minute to congeal. I promise it is worth the wait!

Then top with your favorite pancake topper. Mine is a mix of 2% fage yogurt with maple syrup.
