Yesterday I woke up bright and early to work at the Farmers Market. I also wanted to make an omelet for breakfast before so I made sure to wake up as soon as my alarm clock went off at 6am.
Clearly Dempsey is not ready to tackle the day.
We had a lot of eggplant this week so I wanted to incorporate it into breakfast. On long island there is this awesome breakfast place called Maureens Kitchen. I have gotten eggplant omelets there frequently so I was out to recreate it.
Since Italian eggplant is bitter I broiled the sliced eggplant first with olive oil and salt in my new favorite cast iron skillet.
While that was broiling I beat some eggs in a bowl and oiled and heated up a small omelet pan. After I poured the beaten eggs in the pan I added the eggplant and some chopped fresh sage.
Once the one side was cooked I flipped the omelet and added a slice of mozzarella on top. Served with a whole wheat English Muffin and breakfast was ready.
Sage is apparently used frequently for medicinal purposes. I’ve read that it is used for digestion, inflammation, menopause symptoms, gray hair, allergies, bad breath and more! Source
