One of my favorite dishes that Matt makes is Eggplant Parmesan. It is more like Eggplant Cheddaresan because he uses cheddar cheese instead of mozzarella and Parmesan cheese. One time we were out of mozzarella so he made it with cheddar. It was sooo delciious that I could not stop eating it. It has more of a ‘fun’ taste (if food can be fun). If the eggplant slices are crispy, they almost taste like eggplant nachos.
During our supermarket shopping I picked up an eggplant and said I was going to re-create his dish. He thought I was going to try and re-create it. Sound like a challenge?!
Last time I made Eggplant Parmesan I ran into a small barrier.. no tomato sauce! This time I had all my ingredients so no stopping me!
Except a broken oven
I realized this after my eggplant slices were already sliced and breaded.
I like to bake my breaded eggplant instead of frying it to make it more healthy, clearly that was not going to happen today… or is it???? My tiny toaster oven still worked so I baked half and fried half in canola oil. Ideally I would have liked to bake all the eggplant slices but then we would have eaten at midnight….
So after I sliced the eggplant into thin slices, dipped them in a scrambled egg mixture of 3 eggs and topped them with bread crumbs
I fried half in a pan with heated canola oil and the other half went into the toaster oven to bake. I fried the eggplant about 5 minutes on each side. Eggplant soaks up oil very quickly so be prepared to use a lot.
Normally I would then put the breaded eggplant slices into a baking dish and top with cheese and tomato sauce, but that was not an option today. I really love goey cheddar cheese so to achieve that I topped the eggplant slices with cheddar cheese after they were flipped.
Once the cheese was melted and the eggplant slices were nice and crispy I created an eggplant layer in a baking dish and then topped it off with tomato sauce. At fist I was going to heat up the tomato sauce, but then I figured that the eggplant was so hot from being fried/baked that the eggplant would heat up the tomato sauce. I was right!
Don’t let that face fool you. When he first took a bite he had a big smile on his face, but then immediately said it was ‘OK’. Ladies this is stubborn man syndrome. He had 3 helpings, I take this as a success! O that is edamame on the side.
Many greek yogurt companies have started to make a frozen greek yogurt dessert. About time since so many people (including myself) are on the greak yogurt bandwagon.
The first one I tried was Oikos blueberry frozen greek yogurt.
Blah.
This is a fat free food. I figured it would not be the best dessert, but I still thought it would be mighty tasty considering their regular non-fat greek yogurt is. Instead it tasted like watered down yogurt.
Nutritionally it is OK, taste it ain’t great.
When Matt came home with this baby I was super excited! I mean does Ben & Jerry’s ever let anyone down?
Nutritionally it was more like a dessert with a decent amount of fat and calories. It did have a little bit more protein than their regular ice cream which ranges from 3 – 5 grams.
This is not a health food, but it is a well – worth dessert.
