Bok in the Wok

From my CSA this week I picked up some baby Bok Choy. Bok choy (aka pak choi, asian cabbage) is a chinesse vegetable that is often in stir frys. It is similar to cabbabe, but looks nothing like it.

Nutritionally it is very dense. It is packed with Vitamins A, C and K, an excellent source of calcium and iron and has very little calories. 7 grams of raw bok choy provides 9 calories. Load em up! It even has a little bit of protein.

Bok Choy is very versatile. It can be used in a sautee, eaten raw and the stalks can even be used for cole slaws (anyone have a good coleslaw recipe?)

For dinner tonight I made a quick sautee. I used this recipe as a guide as I wanted them extra garlicky. Instead of just garlic I used some shallot scapes that were leftover from my cooking demonstration along with some chopped garlic. I also used olive oil instead of vegetable oil to heat up the garlic,shallot scapes and grated ginger in my cheap wok.

 

Then I added added the chopped bok choy leaves for 30 seconds, and then added 1/4 cup of veggie stock for 1 minute

After I left the bok choy covered for 1 minute I threw in some spinach leaves because I added to much vegetable stock.

That was dinner.

JK! I do not think only some sauteed spinach and bok choy would fly with Matt (or my stomach). I don’t know why I just thought of this, but once when I was a waitress a bunch of guys were out to dinner for a bachelor party. They asked my work friend if she could bring out a hot dog without the bun and say his future wife called and said this is all he is allowed to eat. How funny! and inappropriate hehe.

To go with my bok choy and spinach mixture I made a basil and buffalo mozzarella pizza. Sooo when I purchased the buffalo mozzarella from the Bethesda Farmers Market I asked the vendor if the mozzarella was spicy. She looked at me funny and said No. Little did I know buffalo mozzarella when they use the milk of a buffalo to make the cheese. Woops! I thought it was buffalo flavored!

So this pizza was not spicy, but delicious! I heart basil.

This is more of a complete meal!
