Apparently we are not the only ones who need a vacation after a vacation.

Matt and I went to the Dominican Republic for several days for a wedding.

Awesome.

Dempsey and Riesling stayed at their most favorite place. The Dog Stay. I give this place one hundred starts. The owner Terry is super super sweet and treats our dogs like their own. They love her!!! When they realize that we are driving up towards the facility they freak out in the car and run to the door. One time we saw the owner Terry at a dog event in downtown Silver Spring and Dempsey ran and jumped on her. The sweetest thing! The other reason why I love this place is because they come home tired.

Unfortunately my place is not all inclusive like the resort, so I have to cook my lunch for tomorrow. Well it is really not that unfortunate because all inclusive places do not have the best food. It is good, but not great. We had one really good seafood dinner and breakfast was good. They had the best mangoes. For lunch this week I made a big pot of fried rice.

Colorful Fried Rice

In a large skillet heat up 2 T of olive oil and about 2 cups of cooked brown rice.

Add grated carrots,

chopped red cabbage

and frozen edamame. Crack 3 eggs and scrambled the mixture. Finish off with 2 T of soy sauce and a pinch of salt.

Lunch done, 4 days worth of laundry not done

Wake up, lots of cleaning to do!
