If you can’t tell by my documented eating habits I generally like to eat organic and wholesome foods. I’m not very big on ‘diet foods’ or ‘processed foods’. Especially with meat I purchase grass-feed/local 95% of the time.
For Easter our very sweet landlord bought us frozen meats from Omaha steaks. I would never let perfectly good food go to waste. I hate wasting food.
Clearly, this is not the most healthiest burger patty. But this does not mean that I can not make a somewhat healthy meal from it….
Veggies n’ Dogs brings you ‘almost vegetarian’ chili.
In a large sauce pan heat 5 garlic cloves and a chopped onion in olive oil.
Add frozen burger patty. Hmmmmm defrosting it prior would have made more sense…
Add 1 can of diced tomatoes
Then a can of kidney beans. Those green things are chopped up leeks I randomly decided to throw in.
“What’s going on????”
Mix in cooked quinoa
Top off with grated sharp cheddar cheese, chili powder and salt.
This chili would taste great on pasta, but for tonight I rocked it Burrito style on a whole wheat tortilla.
I think I redeemed the nutritional value of this meal pretty well. The chili created 4 servings between us. So instead eating 23 grams of fat each, we ate about 6 grams of burger fat per each serving. Not too shabby.
