I have been having major issues making pancakes lately. Two weeks ago, but my batches came out way too doughy, and last week my batter came out to be mush. Not today!
My bestie Felicia recommended using pastry flour instead of regular flour. The gluten is less ‘hard’ therefore it does not create such a doughy consistency. She also recommended not to mix it too much. Of course since she is the best I listened to her and good thing I did.
Apple Cinnamon Pancakes
- 1 & 1/2 apples
- 3/4 c whole wheat pastry flour
- 1 t baking powder
- 1/2 t baking soda
- dash of salt
- 1/2 cup buttermilk
- 2 eggs
- lots of cinnamon
Cut the apples into small pieces then blend until it resembles applesauce.
Mix wet ingredients and dry ingredients separately.
Then combine and add apple mixture and cinnamon. Pour batter onto a hot greased skillet.
Flip after 3 minutes.
Success! Not too doughy and not a giant slop. The apples really come through, and it is delicious if you get a bite of an apple chunk.
