Mush with Crunch.

Evening everyone!

I am kinda bummed I haven’t posted more this week. Want to hear the worst excuse ever? I ran out of AA batteries for my camera and did not go to the store to purchase more.

Lame I know!

I’ve been depending on Matt’s I Pod, but yesterday he got home way after dinner was prepared so I couldn’t use it :-( . O well, this week I am going make it a point to purchase rechargable batteries. Ever since I started blogging my camera runs out of batteries super quick! Anyone ever used these before??

Since it’s Friday (woot woot) I wanted a quick and simple meal. Initially I was going to make wraps with sardines, but after I made my sardine mix I realized that I never liked mushy with mushy (such as a wrap). The restaurant I used to work at served their tuna fish sandwiches in a wrap. I always recommended to the customers to get a toasted bun instead. I just feel that a mushy salad with a mushy wrap is not as appealing as some mush with crush.

Sardine salad (with a crunch)

  • 1 can of sardines in lemon oil oil
  • 1 can of chickpeas
  • 1 avocado
  • 2 T lemon juice
  • 2 T cilantro chopped
  • bunch of crushed pita chips
  • salad greens

Smash the chick peas in a bowl

A spoon usually works fine, but the chick peas that  I had were super hard. I wound up having to use an immersion blender. I thought maybe they were expired, but the expiration date was not till 2014. This is what I get for not using my trusted 365 brand.

Add avocado and smash it up

Then Cilantro and lemon juice

 

Mixed in my sardines. I did not drain them because I wanted the full flavor of the lemon olive oil

Topped with crunched up pita chips

 

Crunched Pita chips make an excellent topping to a salad. Especially if there is a good amount of salt, it adds such a nice kick! They are like those sesame sticks, but a lot less calories.

After everything was mixed I plopped in in a bowl with a little extra greens.

Love how easy it is!

The Washington Humane Society is having a big fundraising event tomorrow called Fashion for Paws. I am volunteering as a Dog Handler. My job is to hang out with the dogs ‘backstage’.. at least I think it is.. O well, I know tomorrow is going to be fun. I can’t wait to see all the cool looking pups! Speaking of which, the Washington Humane Society is also hosting a Cutest Pet Contest.

 

I completley agree, that you two can totally win it. However, I don’t think this picture will cut it. Any long time Veggies n Dogs readers recommend any photo that you have seen? Would LOVE your recommendations!
