Can we please talk about this weather?? It has been amazing!! I was able to bring my bike for a nice long ride that has been much needed. And I was able to do this in shorts and a tee shirt. Riesling even wore Sunglasses.

For dinner tonight, I prepared a quick and very easy steak salad. Got to use my CSA greens!
- 1/2 pound of steak
- 1 T mayo
- 1 T olive oil
- juice of 2 limes
- 1 T honey
- greens for salad
- cherry tomatoes
- 2 T balsalmic vinegar
- 1 T honey mustard
- Tortilla chips (for carbs)
Mix balsalmic vinegar and mustaard into a bowl. Add steaks and let them marinate for 20 minutes.
Add steak to the grill or grill pan and add scallions. Cook until desired temperature.
Prepare the salad dressing by mixing mayo, olive oil, lime juice and honey. For mayo we use a brand called Lemonaise. It is so much tastier than regular mayo. A little bit lighter in calories too.
Add salad greens and cherry tomatoes.
Add the steak and crushed chips to the salad.
I love salads + protein (fish, meat, tofu, etc) as a main meal. When divided between the two of us, we each had 4 ounces of steak. That is perfect portion. Red meat is definitely not something you want to eat a lot of. Once a week is perfect.
I also finally made something chocolate from chocolate magazine. I used their version of cakey brownies and made them with a peppermint kick
- 1 3/4 cup of flour
- 3 T cocoa powder
- 1 t salt
- 1 t baking powder
- 4 ounces bitter sweet chocolate
- 2 sticks of butter
- 2 1/2 cups of brown sugar
- 1 cup of water
- 3 eggs
- 1 T peppermint extract
In a bowl mix together flour, cocoa powder, salt and baking powder. In a large saucepan melt butter and sugar.
Take the mixture off the heat and add the bitter sweet chocolate and peppermint extract.
Add the dry mixture and stir until smooth.
Pour into a cake pan and bake at 350 degrees for 35 minutes.
Enjoy with ice cream!
