The right spot

I got this recipe for Cajun Mac n Cheese from my Chocolate Food Network Magazine. To date, I have cooked 3 non-chocolate recipes, but no chocolate ones. Blasphemy! I was going to cook one last Saturday night but after our greek food and pina coladas, I was stuffed and could not even think about cooking something else. I actually bought plain vanilla ice cream this week to go with the chocolate cake I wanted to bake. Since there is no chocolate cake, I have been stuck with just plain vanilla ice cream. Good thing I have some chocolate chips I can add!

There is nothing better than homemade Mac n Cheese. I love how restaurants are starting to serve homemade Mac n Cheese more and more. One of the best Mac n Cheese dishes I had from a restaurant came from Birch & Barley. Totally helped that I had a wonderful IPA to accompany it. This Mac n Cheese recipe is super easy and only requires a stove top. Of course I made substitutions to make this more of a veggie dish

Cajun Mac n Cheese

  • 2 cups of whole wheat pasta
  • ½ bag frozen edamame (substituted for sausage)
  • 1 T olive oil
  • 2 cups of 2% milk (substituted for whole milk)
  • ½ cup of shredded cheddar cheese
  • 2 T flour
  • Red bell pepper chopped
  • 3 scallions/green onions chopped
  • 2 T Cajun spice (found in the seafood department, not the spice department)

Cook the pasta according to directions. While the pasta is cooking heat olive in a large heated skillet. Add edamame, red peppers and scallions and cook for about 3 minutes.Then mix in Cajun spice.

 

Add the flour and stir until everything is mostly coated with flour.

Gradually add in milk and stir until the mixture is thick.

Then add the cheese and stir until melted.

This was super easy! Next time, I am going to add more cheese to get more of a cheesy taste.

This is the first meal I made this week with none of my CSA products :-( . O well, hopefully soon there will be peppers available.

Does anyone notice that dogs LOVE to be as close to people as possible. They have no concept of claustrophobia or space. Look at this girl.

There is an entire couch, another whole couch and their beds! To be honest, I would be hurt if she chooses to sleep in her bed instead of trying to nudge into the tiny spot on the couch right next to me. O dogs!
