It seems I have been on a ‘Healthy Bar Food’ Kick. Tonight I made some easy peasy quesadillas. So much fun! To me it is just like another version of a grilled cheese, so I guess I am creating another replica of my last dinner post… O well! There is just something I love about a dinner which just consists of whole grains, cheese and vegetables. You hit all food groups, it is simple to cook and it comes out delicious 99% of the time (you can burn this). Gotta love it!
Tonight my vegetables consisted of broccoli and spinach. Not very adventurous, but it will do for a quick Monday night dinner. I promise in the near future I will have a much more fun quesadilla recipe (if you care)
Broccoli and spinach quesadillas
- 6 whole wheat tortillas
- 3/4 package of cream cheese
- 1/2 cup of mozzarella cheese
- 2 large crowns of brocolli chopped
- 1 cup of raw spinach
Steam broccoli and spinach until soft. I recommend steam broccoli for a couple of minutes longer than the spinach. Broccoli does not taste that good if you over steam it.
Grease a flat skillet and set on medium. Add 2 tortillas to the skillet (or however many fit) and add cream cheese to one tortilla and a little bit of mozzarella cheese to the other.
Cook for about 2 minutes, then add the vegetables to one of the tortillas.
Carefully add the tortilla with only the cheese on top of the tortilla with vegetables.
Smush down with a spatula and cook for 2 minutes, then flip over and cook the other side.
Repeat this process until you have made 3 quesadillas. Cut each tortilla into 4′s on a cutting board.
However delicious and nutritious these are, be careful of how many dillas (individual piece of quesadilla) you eat. This is the nutrition facts for one tortilla of the brand that I used.
I view this as a very nutritionally dense tortilla (meaning thumbs up). It contains a good source of protein, fiber and relatively low in fat. However, if you eat one whole quesadilla, you have to double the numbers. I am not showing this to scare you from making/eating a quesadilla, especially mine , I am just trying to make you aware of what you are eating, especially when you go for a second quesadilla. If you eat 2 quesadillas you are consuming 108 grams of carbohydrates, and 560 calories. So watch out how much you are eating. I saved one whole quesadilla for lunch. Remember everything in moderation!
Despite my warning for eating too many tortillas, look the wonderful ingredients. I love this brand. This is a great source of carbohydrates as the first ingredient is whole wheat spelt flour meaning this is a 100% whole wheat product.
