Sometimes for dinner you just want something fun. To me bar food screams fun (and indigestion). I think it is the atmosphere that is really the fun part, but food always makes it better!
Tonight Matt “and I” watched UFC. Usually we would go to the bar, but tonight we decided to stay in and have our own “bar night”.
Healthier Veggie Nachos
- 1/2 large bag of blue corn tortilla chips
- 1/2 cup of sharp cheddar cheese
- 1 can of vegetarian chili ( I Love Amy’s)
- 2 cups of veggies. You can use anything. I frequently use mushrooms and a green like arugula
Line a cookie sheet with parchment paper and add chips.
Add Chili on top

Set oven to a low broil and add nacho’s for 8 minutes until cheese is melted.
This is a quick, easy and fun meal to make. It is relatively impossible to mess up nachos so don’t be intimidated to add anything you want. The veggies that I added were mushrooms, arugula and cilantro. Although homemade nachos are still high in calories because of the chili and cheese, they much healthier than ordering them from a restaurant. Of course not many people would have an entire platter, but I’m sure it is often shared between two people. Not only would you be consuming way too many calories, fat, saturated fat and sodium, but you would also be consuming NO veggies. Not cool . What I find funny is that when I went to look up Applebees Nutrition Facts, the nutrition document is in a .ashx file. What the heck is that? I tried several times to download it and I was not able to. They really don’t want to you to see their nutrition facts do they?
Try making your own fun bar foods next time you just want to hang on the couch. You will feel much better the next day than if you went out!
