Easy Peasy

It is always good to have an easy go to meal that you can quickly cook up. Bonus points if it is healthy! One of my favorites are Whole Foods Fish Burgers. They have several types of fish burgers such as Tuna, Salmon and Mahi-Mahi. I like to switch them up a bit.

Look at all that protein, 18 grams! No need for edamame tonight. I also like that the sodium is not that high for a frozen meal. One of my favorites is that it only has 1 gram of saturated fat. Score!

Of course dinner had to include veggies, so I prepared what brussel sprouts I had left over, but a little differently this time. I made them au gratin style.

Cheese and breadcrumbs. This method never goes wrong.

Sprouts au gratin

  • bunch of brussel sprouts chopped
  • 1/2 – 1 cup of cheese
  • 1/2 cup of breadcrumbs

Steam the brussel sprouts for 8 minutes.

Once brussel sprouts are a bright green, take them out of the steamer and add to a small roasted pan. Top with cheese

and breadcrumbs

and of course more cheese!

Place in the oven and set broiler to low. Broil for 10 minutes or until cheese is melted. Then set the broiler to high and broil for 3 minutes or until desired crispiness.

The fish burgers are even easier to prepare. Lightly oil or grease a skillet on medium. Cook burgers for 5 minutes, then flip and cook on other side.

Served with an English Muffin and tomatoes.
