A new kind of meatball

Chips, salsa and guacamole.  Sounds like football Sunday!

I keep forgetting to take pictures, so here are some fake ones of our lunch.

Although this is not the most healthy lunch,  it is also  not the most un-healthy either. Since I did not have as much salsa as I thought, I added an extra tomato and put it all in the blender. Pureeing salsa helps to bring out the flavors.  I also made guacamole from fresh avocados and red peppers. What a fun way to watch a game.

Then we discovered Dempsey…….

Did he really have to eat a pen?  Well it is a blue pen, the Giants are playing…..then we realized  he was not trying to get in trouble, he was being a good fan by trying to paint his face! Although he didn’t quite look like this dog, he still had good intentions.

Now he was way off with Riesling. You got the wrong end buddy!

I’ve had my eye on this recipe for a while. Beef and Quinoa meatballs from the Whole Foods Recipe site. Instead of beef I used Lamb and I also forgot the egg at the end. It still came out delicious, the meatballs just did not hold together as well. 

While the meatballs were in the oven I put up some Whole Wheat Pasta.  I added some frozen pesto  from a previous batch I made. Once the pasta was cooked I put the stove on low and added the pesto in with the drained pasta.

Since there can never be enough veggies in a dish, I sauteed about 1.5 cups of mushrooms.

I was extremely pleased with the way the recipe came out. What a wonderful way to get more out of your meat by adding some quinoa and veggies, I will be making this recipe again!
