Last night I went grocery shopping at Whole Foods. I then decided to eat dinner there too. Have you ever checked out the cooked foods at Whole Foods. Everything looks so good, its hard to choose. I finally decided with something simple. A slice of roasted portabello and shallot pizza. As usual, Whole Foods dinner never lets me down.
For dinner the next night, I decided to create my own mushroom and shallot pizza.
I am in love with this brand of frozen pizza dough. It is soooo delicious.
If you never had New York pizza….. I’m sorry.
I rolled off out the dough, topped it with some marianara sauce and added some cheddar cheese.
Now its VEGGIE TIME
I added some raw mushrooms and sliced some shallots. I use a garlic press and slicer for the shallots. This is super helpful if your knife skills are lacking (like mine.)
Now this shroom pizza goes into tnto the oven at 400 degrees for about 30 – 40 minutes, depending on how crunchy you like it.
Even though cheese has protein, I wanted to add a little more to my meal. So I cooked some frozen edamame (this is a great source).
