Tribute to eggs

Good Morning!

To start the day I made one of my favorite quick breakfasts.

1 egg sunyside up, 2 pieces of whole wheat toast and green pepper slices. Why do I love this breakfast?

This breakfast has only 3 ingredients, can we get any simpler? It includes a full serving of protein, carbohydrates, fat and veggies. Eggs are a GREAT source of protein. In fact I learned in school that they are the most complete protein (contains all 8 essential amino acids) because an egg’s protein structure best matches the humans. Funny the things we remember from school!

Unfortunately eggs have a bad rep because of their cholesterol content. Yes they are high in cholesterol, but they are low in saturated fat. Saturated fat is what raises serum cholesterol while dietary cholesterol does not affect serum cholesterol. Eggs are also an excellent source of Choline and many endless nutrients. Also each egg has only 70 calories.
